Our Swiss Poutine Preparation

1. Fresh-Cut Fries

We start with fresh, locally sourced potatoes that are hand-cut daily. The fries are cooked in a two-step process - first at a lower temperature to cook them through, then at a higher temperature to achieve the perfect golden crispness on the outside while maintaining a fluffy interior.

2. Authentic Cheese Curds

We source our cheese curds from Quebec, where they're made fresh using traditional methods. The curds are delivered to our restaurants within days of production to ensure they maintain their distinctive texture and mild flavor.

3. Rotisserie Chicken

We use our signature rotisserie chicken, which has been marinated for 24 hours and slow-roasted on our rotisserie spits. The chicken is pulled from the bone while still warm and cut into bite-sized pieces to be incorporated into the poutine.

4. Signature Chalet Gravy

Our Chalet gravy is made using a blend of chicken stock, herbs, and spices. It's simmered until it reaches the perfect consistency - thick enough to coat the fries but not so thick that it becomes gluey.

5. Assembly

Each Swiss Poutine Deluxe is assembled to order. We start with a bed of hot, fresh fries, add a generous portion of cheese curds, sprinkle with our rotisserie chicken pieces, and then ladle the hot gravy over everything. The heat from the fries and gravy softens the cheese curds just enough while maintaining their signature "squeak."

This careful preparation ensures that our Swiss Poutine Deluxe offers the perfect balance of flavors and textures - crispy fries, squeaky cheese curds, tender chicken, and rich gravy coming together in a uniquely Canadian dish with our Swiss Chalet twist.

As a Quebec native, I'm pretty picky about my poutine, and Swiss Chalet nailed it with this one! The fries stay crispy despite the gravy, the curds have that authentic squeak, and adding the rotisserie chicken takes it to another level. I always order extra curds because I can never get enough. The regular size is actually quite generous - it's a meal in itself!

I usually order the quarter chicken when I go to Swiss Chalet, but decided to try this on a whim and now I'm hooked! The combination of their rotisserie chicken with traditional poutine is genius. The gravy has that distinctive Chalet flavor that works perfectly with the cheese curds. I recommend getting the large portion if you're really hungry - totally worth the extra few dollars.

Ordered this for delivery and was worried it would be soggy by the time it arrived, but they package it really well! The fries were still crispy, and the chicken adds such a nice flavor dimension that you don't get with traditional poutine. I added the Chalet sauce on the side for dipping some of the fries - highly recommend trying that combo. Will definitely order again!
